Healthy Freelancer’s Breakfast: Oatmeal with Fruits and Nut Sauce

IMG_1250 One of the advantages of being a freelancer and working from home is the ability to prepare your own breakfasts, lunches, and dinners. Imagine being able to delay breakfast to a later time, establish a regular eating schedule, and cook fresh, hot meals. Of course, this requires overcoming laziness!

I want to share my discovery: a healthy breakfast of “Oatmeal with Fruits and Nut Sauce.” I’ve always loved oatmeal for breakfast, but like any dish, it can become monotonous over time. So, I keep inventing new breakfast recipes featuring oatmeal. Here’s the latest one we’ve been enjoying every morning for two months now. The secret is that you can prepare it differently each time.

Ingredients (for 2 servings):

  • Any fruits or berries available
  • A handful of nuts/seeds (walnuts, hazelnuts, almonds, sunflower seeds, pumpkin seeds, cashews)
  • 1 tsp lemon juice
  • 1 tbsp honey
  • 8 tbsp oatmeal (4 per bowl)

Living in Thailand, we use local fruits like pineapple, banana, coconut, papaya, and mango instead of berries common in Russia. Trust me, any combination of fruits and berries can work – it only adds variety to the dish without spoiling it.

Recipe:

  1. Chop 2 small bananas, 1 medium mango, 1/4 pineapple, and 1/4 papaya finely into 2 bowls.
  2. Add 4 tbsp of dry oatmeal to each bowl.

For the sauce:

  1. In a blender, combine the water from 1 fresh coconut (or any freshly squeezed juice), coconut meat, nuts/seeds, 1 tsp lemon juice, and 1 tbsp honey.
  2. Blend until smooth.

Pour the sauce over the oatmeal and fruits. It’s ready to serve!

Tips and Variations:

  • Replace papaya and mango with seasonal berries and fruits.
  • Substitute coconut with freshly squeezed orange, grape, or apple juice.
  • Try blending berries with a small amount of water for the sauce.
  • Experiment with different juices or even unsweetened yogurt as the liquid base.
  • You can add nuts to the oatmeal instead of blending them into the sauce.

This versatile recipe is perfect for digital nomads and travelers who want to maintain a healthy diet while enjoying local fruits. It’s an excellent way to start your day with a nutritious meal that can be adapted to whatever ingredients are available in your current location.
